On 9 November 1989, the whole world's eyes are on Berlin: the Wall has come down. The decision is made very quickly with friends: Let's go to Berlin. More than two decades after the fall of the Wall, Mr. Collard remains in the city.

In 1984, after graduating from the Ferrandi School as a chef and completing additional training in the hotel industry – after working in several hotels and in catering – Collard decides to set up his own business. He has been selling French specialities at Berlin markets since 2003 and opened his first shop on Lausitzer Platz in Kreuzberg in 2008, followed by a second shop just a few metres away in 2011, in Markthalle Neun. Today, assisted by his children Léo and Tom, Mr. Collard offers a selection of champagne, crémant, wine, cheese and charcuterie.
