Anatolian Manti with yoghurt-butter-paprika-sauce!

Pretty much every culture in the world loves dumplings. Manti are a Turkish version and are brought to us at Markthalle Neun by Duygu and her husband Mehmet. The recipe comes from Duygu's grandmother and it's not just people who grew up with this dish who enjoy the flavours of their childhood - everyone else gets to feel what it means to have a bowl of love pressed into their hands.

Duygu is actually a business mathematician. But since 2018, she has also been at the dough sheeter, preparing her manti (which are pronounced ‘mante’). What many people can't believe: every single one of these fingertip-sized dumplings is prepared by Duygu by hand. They are then poached briefly at her stall and topped with a warm yoghurt sauce and melted paprika butter. If you like, you can add a touch of sumac, mint and chilli on top.

The heart of Markthalle Neun is the market: vibrant stalls, a fish counter, glass-fronted bakeries, and a butcher’s shop; a brewery in the basement and open kitchens. Shopping here means getting up close and personal with food production, bringing it out of anonymity and into urban life.
