Peru is high up on the international fine-dining landscape – but what would high-end cuisine be without markets and street stalls? Non-existent! The idea: to read cuisine as a flavourful history book. It begins with millennium-old Inca traditions from the Andes. Over the centuries, it has simmered alongside African influences, Chinese (Chifa) and Japanese (Nikkei) migration to become far more than just a colourful stew:

Ceviche, cooked in acid, meets the wok heat of a lomo saltado and fiery anticuchos skewers straight from the charcoal grill. An honest cuisine that connects the Pacific with the world’s migration stories.
