Hot Spätzle!
‘Every metropolis lives from the mobility of the people who live in it - people come and go, bring their personal and cultural traditions and leave behind a contribution to the complexity – and thus to the special character and attraction of a city,’ says author Ursula Heinzelmann.
Since 2013 and every Thursday, our street food traders have been showing what makes this city so special: Their culinary stories. Every month we introduce you to one of our street food traders.
Heisser Hobel
‘Where there's planing, there's spaetzle!’ is the motto of “Heisser Hobel” - the rolling spaetzle manufacturer from the Allgäu. They tried their hand at our Thursday street food market for the first time in 2013. Today, they are a permanent fixture in the hall and can be found between bread from Domberger, Frisch Gefischt and Beet & Baum - in the best of company. The Kässpatzen are freshly prepared in front of your eyes. So you can see exactly how three different types of cheese are mixed in after the dough has been grated. The mountain cheese comes from the family-run organic cheese dairy ‘Obere Mühle’ in the Allgäu. The whole thing is topped with roasted onions, black pepper and fresh chives.
By the way: If you are ever in Bühl am Alpsee, you can also find spaetzle from Heissen Hobel there, or you can book the charming trailer for your catering.
