Lionel has long been a highlight of our weekly markets with his beastly, greasy delicacies - the name of his stall, Oleo Gustus, means ‘flavour of fat’. His interpretation of the French classic croque monsieur in particular pays tribute to fat.
‘Croque Monsieur is my childhood! It's so simple - bread, cheese, ham - I wanted to pass it on, only in a better version.’ Better means: ‘Spezi’ Lionel knows all the producers of his products personally: cooked ham from the south of France, beef from Spain, Swiss mountain cheese from Alte Milch. Le Brot bakes the bread especially for him and Werner makes the mustard for him. ‘Before the ingredients go on the white bread, the outside of the slices have to be spread with butter so that it always crisps up!’
